Owen’s Chipotle pepper and veg soup
Ingredients
1 x tin chipotle in adobo
2 x tins chopped tomatoes
5 x carrots
5 x peppers
2 x onions
1 x pint of vegetable stock
2 x cloves garlic
1 x teapoon mexican oregano
3 x tins of black beans
Coriander and sour cream to garnish
Method
Chop the veggies , chuck everything in the slow cooker.
Cook on high for 3 hours or slow for 6 hours
Blitz about a quarter with a soup blender, return to soup about 35 mins before serving
Coriander & sour cream to garnish. As a meal, serve with rice.
